Tonight and tomorrow I will be bonding with M&T. Sunday I will be hunkered down at my desk, working my ass off like the corporate monkey slave I am.

Well, today I'm home. Watched survivor for a while last night, but I didn't see who got voted off so that will be one of my first bits of research this morning. We're VERY busy with work this week. Do you have any weekend plans? I wish we could get a poker game going!!!

Leigh's cold has prompted me to recommend this product to you sickly people.

Zicam is one of those things you need to keep in your medicine cabinet for when you THINK you're coming down with a cold. You know the feeling, your throat feels a little puffy, you're very tired and cranky, everyone around you has been sick.

It's these medicated qtips, they don't smell or anything, you swipe them in your nostril when you feel the cold bug on your skin. You do it for a day or two every 6 hours or something.

I feel it really works. It definitely stopped Isaiah and me from getting colds this year. I congratulate myself on having a very healthy family this year. My kids only missed one day of school each due to illness and that was before I knew about Zicam so it doesn't count.

In case you were wondering, EVERYONE sucked on American Idol last night. It was terrible.

The night before last I had a dream that I was babysitting Maddy and Isaiah in a house that had a grass floor. We were being stalked by a black bear. I couldn't take it anymore, so I told Maddy to take care of it. She became a huge black bear and drove the other bear off with her ferocious growl.

Re: Avatar, now I feel as though I must dress my avatar every day, since she's being viewed by all. I wish I had the same clothing as she does, it would be much easier to be able to pick out two people's outfits at once. Oh well. She gets dressed before I do obviously.

oh admin, i do love you, and the sidebar looks ok, but now whenever i look away from the blog, i see spots in my field of vision. that's called something.

i made pizza dough/pizza for 7 tonight--rousing success.

look at little GMU! everyone i work with went there for something or other. that's fun.

last night i gave max a bath. it went better than any of you envision.

as you can see, the blog is under construction. If any of you can figure out how to get the sidebar crap to the top of the page please let me know. I have all the code for the tag and everything else.....

Well we certainly do SUCK at the brackets. We are all out now. It's a race only to see who sucks the least at this point.

Well it was a fun weekend, thanks mostly to Leigh, who drove me and my fighting kids all the way to Houlton and back. We had a lovely breakfast at Grammy's in Linneus, but we should have left the kids in the car because I don't think either of them ate anything but bacon. I'll post a pic of the gigantic pancakes. If you ever eat there only order ONE because it's enough for ANYONE.

We then went to chez Callahan for the bash. The 4 year olds were extremely cute and I never did behold such a happy baby as that Sinead. I guess I sent you all photos of that scene. On the way home Leigh and I were despairing over our lack of anything fun to do, and we resolved to go to bangor for pad thai and a possible movie. Then we decided we'd do pad thai and pina coladas at home instead if D'Ali G show was at her place. It was so we did. The pad thai was very edible and Ali G was..well, if you've seen it you know what it was, if you haven't you don't, and I can't explain it to you. It was juvenile and offensive, yet very entertaining for us. The coladas were the perfect dessert and the company was charming. Today I have done nothing.

Today I am working from home as my car is in the shop. I should have gone in, really, but I didn't. Ugh for cars. Hopefully it's not fatal.

In other news, I took my first allergy pill of the season today.

I suppose I need to do a bridge report as well.

Bridge was held at Suzanne's on Tuesday, hosted by me. Nonie, Lora and I all got little slams. The snack was chex mix (sweet and salty) and the treat was coconut macadamia baked alaska, which seemed like a great idea, but turned out to be only ok. I needed more coconut in the cake I think. Anyway a good time was had by all. The prizes went to Helen - High, Faye - Low and Lora - goose.

In case you haven't heard about my latest bargain (I do love a bargain), I just purchased a NordicTrack skier. Yes, they retail for $600. I know it everyone! However, I got mine on e-bay for....*gasp* $15.57!!! Yes, it's slightly used, but hey, it has all its parts, works, and comes with a 90 day warrantee and an owner's manual. And the guy put it in my car for me. Tell me, have you had a bargain like that recently?

School wasn't canceled, but I almost had to turn my wipers on.

We got 4 flakes of snow, in case you were concerned about my well-being through the worst storm of the season. It's still pretty cold here--in the low 30s, and it hasn't been that cold all winter. I'm even wearing a long-sleeved shirt today, and I only own 2 or 3 of them.

Weekend in Review:

Well, Leigh already told you about WW's, what she DIDN'T tell you was that we got enough food fo 16 people (as usual). Also she didn't tell you that there Becky made some guy show us his Tat "Red Sox" all across his back, which was something of a highlight.

Also I was trying to explain to Leigh the "Big Bucking Chicken" commercial, but couldn't even say it, I was laughing so hard. I too, was glad I didn't have a nightcap guiness, because I think I would have exploded if I'd had it.

Yesterday, JK and I went to Augusta for the evening. We had dinner with Red and Karen at Slates (excellent, btw) and stayed at the Senator. I had Espresso Seared Scallops which was VERY VERY good.

Today we had breakfast at someplace in Augusta, it was nothing special but it WAS ok. Then we went for a walk and came home.

Girl scout cookies came today. I highly recommend the new ones.

Allow me, if you will, a moment to stroke my own ego. Last night Mila, and my co-workers Candy and Nazie came over for dinner. I made pot roast, with sweet taters, carrots, parsnips, and turnip, and garlic whipped taters. I also made a 3-layer carrot cake, and Mila made cream cheese frosting and covered the cake in chopped walnuts.

EVERYTHING WAS GOOD. Holy cow. The meat was tender and stringy and succulent. The roasted veggies were tender and juicy and meaty. The whipped taters were smooth and flavorful and perfectly seasoned. My cake was not dry. The frosting was AMAZING. Even the wine, after 3 hours of breathing, was decent. Mila made herself a salmon fillet in lieu of beef. No one left hungry. Even Todd got a doggie bag for lunch today. I was pretty exhausted by the end of the day though.

A vvgt was had by all. Today after work I'm going to the gym then the kids and I are going to watch "Walk the Line."

All I can say is March Madness won't be the same without the Callahan's!

I should also warn you that you'll want to open a window when you make that, the air gets pretty vinegar-y for a while.

I can definitely feel in my thighs and butt that I got a good workout yesterday. And that is not a bad thing.

Obviously the "production value" is pretty low, I'll have to get some big lights I guess.

Can food network be far off?

Last night, for dinner, I decided to make "something different" since I hadn't really planned for it, I was limited in my available ingredients. I had though about making Adam's Chicken with 40 cloves of garlic, but while searching for a different recipe (just for comparison's sake) I came across "Asian Chicken" in the cookbook "Garlic Galore" compiled by M.H. Cummings, 1993. I don't know where I got this cookbook, but whoever gave it to me - thank you.

Asian Chicken
Serves 4

3 Tbsp peanut oil
3.5 lbs, flying chicken, cut into pieces
1 head of garlic, seperated, peeled and coarsely chopped
2 small dried hot red chili peppers (optional)
3/4 cups distilled white vinegar
1/4 cup soy sauce
3 tbsp honey

1. Heat oil in large, heavy skillet and brown chicken well on all sides, adding garlic and peppers about 5 minutes before end.
2. Add remaining ingredients and cook over medium high heat until chicken is done and sauce has been somewhat reduced about 10 minutes.



3. Removee white meat when done, keeping eye on remaining dark meat to be sure sauce does not boil completely away.

4. There should be sufficient sauce to serve with chicken. Water may be added as needed.

Now for my variations.
I used 2 lbs boneless chicken thighs and that was probably enough to serve three. I didn't have the chili's on hand, but I threw in one red bell pepper, cut in large chunks, at the same time I threw in the garlic. Since I was using boneless chicken, I threw those in after the chicken had browned on one side only, to allow the veggies enough time to cook. I also added 1 pinch of cayenne pepper, 3 pinches ground ginger and a tbsp zarbs (the classic Asain ingredient). If I made it again I would probably use rice wine vinegar, though I don't know if it would make much difference. You could also add some pineapple chunks if you wanted even MORE of a sweet and sour effect. The final dish.....

Ok so I overcooked the peas some. I know it, and I was very disappointed. The sauce took a few minutes longer than I expected, AND I got distracted trying to come up with a fancy presentation (which I never came up with obviously. In the end, the chicken was delicious and I would definitely make it again because it was so damn easy. Maddy even said it was "good" though she didn't have more than one bite. It may appear that I've vanished, but I really haven't. Here I am. Not much has been going on with me...catching up on my Project Runway and my American Idol. I went to the gym last night (363 calories, tyvm), and Mila made my favorite veggies and tofu and peanut sauce and rice thing. I got my bed together and I don't have a digital cam so you can't see it. But it rocks. Well, not literally--I would get motion sick. I now have 4 dining chairs thanks to my co-workers. My car is still running (that was for Mom and Jimmy). And that video--OMG. Maddy still sounds like a little baby!

You hate to say it when a movie is really pretty gruesome, but there WAS some humor to this movie. There were a few plot flaws, but over all it was pretty good. Be prepared to be a bit grossed out at times though, particularly if you don't like knives.

MY MOTHER'S ITALIAN-AMERICAN MEATLOAF

We all have memories either of great or terrible meatloaf meals from childhood. My mom's meatloaf is a fond food memory. It was always moist and juicy, with a touch of Italy from the tomatoes and pecorino Romano cheese. It also passed the test of any respectable meatloaf: it made good sandwiches the next day.

1 pound ground beef
1 pound ground pork
1 pound ground veal
1 cup milk
1 cup bread cubes (3 or 4 slices Italian country bread, crusts removed)
1/2 cup finely grated pecorino Romano
2 tablespoons minced garlic
1 onion, cut into small dice
2 eggs
2 tablespoons dried oregano
1/2 cup chopped flatleaf parsley
Fine sea salt and freshly ground black pepper
Olive oil, for greasing
1 cup canned plum tomatoes, crushed
2 tablespoons tomato paste
1 medium carrot, diced
1 stalk celery, diced

1. Preheat the oven to 350°F.
2. Put the beef, veal, and pork into a bowl and kneed them together.
3. Pour the milk into a bowl and soak the bread in it, squeezing it into a paste. Add the soaked bread to the bowl with the meat and work them together as though you were kneading dough. Add the cheese, garlic, onion, eggs, oregano, and parsley. Season with salt and pepper and knead again until well incorporated.
4. Oil a large roasting pan with the olive oil. Form the meat mixture into a large loaf in the center of a roasting pan.
5. Stir in the plum tomatoes, tomato paste, and 1 cup water together in a bowl and pour the mixture evenly over the meatloaf. Scatter the carrots and celery in the pan around the loaf.
6. Put the pan in the oven and bake until a skewer inserted in the center of the loaf comes out warm, about 1 1/2 hours. If the loaf begins to look dry while cooking, tent it with aluminum foil. Remove the pan from the oven and let it cool slightly.
7. Slice the meatloaf into servings, put 1 serving on each plate and spoon pan gravy and vegetables over and around the meatloaf.
Your Nightly Specials
You can make the loaf with beef and veal only, or with just beef.
Lay some raw bacon strips over the loaf before baking. (This was one way my mother made her meatloaf extra special.)
Add some sautéed mushrooms to the pan during the last 20 minutes of cooking.

The taste is very pleasing despite their horrible appearance, but here are some tips if you plan on serving them. They advice you to let them soak in cold water to avoid discoloration. What they mean is to NEVER LET ANY AIR GET TO THEM, PEEL, SLICE AND DICE UNDER COLD WATER AND PLUNGE IMMEDIATELY INTO WATER TO SOAK OR THEY WILL TURN A DISGUSTING GREY IMMEDIATELY AND I CANNOT STRESS HOW IMMEDIATE THIS IS!!! I did not do this to the first batata I dealt with, but I DID do it to the other two. Ok second tip: do not serve this to anyone you want to impress unless you are eating in the complete and utter darkness. While the TASTE of batatas is VERY pleasing indeed (not as sweet as a sweet potato, just lightly sweet), the look of them is horrible. If you served them to the queen she would think you were serving her old grey potatoes and you would NEVER get your knighthood, or prince Harry's hand in marriage, whatever the reason you would be cooking for, it wouldn't work. Please don't serve batatas to the queen, but you may serve them to me because I like them very much indeed, so does JK and so does Maddy.

Well Jen, although i would have loved to have made your meatloaf you didn't tell me about the ground pork and the losm last night, so i will NOT be having your meatloaf dammit. Also Leigh and I found gorgeous asparagus at hannaford so we will NOT be having green beans either. In fact, my dinner is going to be not so anti oscar after all, as I am having cuban sweet potatoes (Batata's?) with mine. That's pretty gourmet if you ask me.

How I Make Meatloaf

Use a scant pound of ground beef ( pretty fatty) and a pound of ground pork.

Add:

An egg
packet lipton onion soup mix
a sauteed onion
1/4 c milk
1/4 c ketchup
2 tbsp wooostahsheer sauce
1 1/2 c bread crumbs
1-2 tbsp oregano
some gahlic
i can't think of anything else

cook at 400 degrees

The results are in. We came in 6th overall. We had alignment problems at the end of the race. IK and JK placed 1st in their first 3 races though. However, I will have you know that we are claiming the unofficial 4th place because two of the cars weren't regulation (we learned after).

So that's it. My cake also did NOT win a prize, due to my total lack of interest for some reason. It did sell for $40, however. Thanks to JK for his very generous bid. Amy I turned in the money you gave me, just so you know. The cake auction netted the scouts over $500!!!

you wouldn't think the phrase "got 'er up on blocks lubing the axle" would ever describe what I would be doing, but alas, it is. JK is making the final adjustments on the pine car derby entry. The green flag is 9.a.m. tomorrow. I wonder if it will

I'm trying to find some kind of online device to put our oscar ballots on the net, but I'm very unsuccessful thus far. I did do the online ballot at yahoo, and you can do that too, but why don't they let you do it like a football pool, and why can't you post your results to your blog. It's pretty ignorant. I invite you all to email me your picks and i'll do a fancy graph to post to the net.

Happy Birthday Dylan!!! Congrat's Dawn and Todd!!!

Fat Tuesday (or, as I like to call it, Cholesterol Carnivale)!

Last night the kids and I decided to take my $100 gift card and head to Morton's, that famous steakhouse. It was really busy for a Tuesday night. Thank blog I made a reservation. Our waiter, Rock, didn't know what to make of us at first because we were wroght with indecision at every turn. We finally decided on Morton's Cosmos (tastes like candy) and a half bottle of wine with dinner.

Todd and I got steak naturally. The VERY VERY VERY BEST STEAK I HAVE EVER EATEN. When is an 8 oz steak worth 35 dollars? When it comes from Morton's. Yes, that's right--35 dollars for a steak, no sides. It came with Burnaise sauce. Yum. So we ate all kinds of crap....steak, baked tater, spinach n' shrooms, Mila had a gigantic salad, hot chocolate cake (that you have to order 35 minutes in advance for some reason), it was all great. Then I decided to ask the waiter where each cut of beef comes from on the cow. Then I asked if they had a meat map, which they allegedly do have, but he couldn't find it (I was a little buzzed, obviously). I got home at 11:15, watched American Idol (all the girls sucked except Mandisa), and crashed around midnight. Today, the bed!

Well, I'll do a report since none of the rest of you will. Last night I did nothing. Bridge was cancelled (again). I spent the evening playing poker and doing genealogical research. I focused on the Ewing line last night and am back as far as Joseph Ewing, who was born in 1680 in Ireland. Tonight I'll continue working on his descendants. I hope to publish a gigantic family tree sometime this summer. Won't it be fun to plot out on my plotter? You will be THRILLED i'm sure to know that the earliest person in my database is Isaac Wilson who was born in 1567 and is JK's 9th great grandfather. We also put a couple of coats of paint on Isaiah's racer in preparation for this weeks big race. I wonder if it's gonna be on ESPN?
